Ingredients:
Dals & Tamarind:
½ cup Chickpeas (split) 🌰
¼ cup Pigeon Peas (split) 🍛
¼ cup Red Lentils 🔴
1 lemon-sized ball of Tamarind 🍋
Spice Mix:
1 tbsp Coriander Seeds 🌿
1 tsp Cumin Seeds ⚪
1 tsp Fennel Seeds 🌱
1 tsp Black Peppercorns ⚫
For Cooking Dal:
1 litre Water 💧
1 tsp Salt 🧂
½ tsp Turmeric Powder ✨
½ tbsp Ginger Garlic Paste 🧄
3 Green Chillies Paste 🌶️
1 tbsp Oil 🛢️
To Add to Cooked Dal:
1 tbsp Kasoori Methi 🍃
2 tbsp Chopped Coriander Leaves 🌿
2 tbsp Chopped Mint Leaves 🌿
1 tsp Garam Masala 🌟
For Chicken Masala:
3 tbsp Oil 🛢️
Whole Spices: 2 Bay Leaves, 4 Cloves, 2 Cinnamon Sticks, 4 Green Cardamoms, 1 Black Cardamom 🌿
1 Onion, sliced 🧅
1 tbsp Ginger Garlic Paste 🧄
500g Chicken 🍗
1 tsp Salt or as per taste 🧂
2 Tomatoes (deskinned) 🍅
3 Green Chillies Paste 🌶️
½ tsp Turmeric Powder ✨
1 tsp Red Chilli Powder 🌶️
1 tbsp Coriander Powder 🌿
250g Bottle Gourd (lauki) 🥒
½ cup Water 💧
2 Green Chillies 🌶️
For Tadka:
2–3 tbsp Ghee 🧈
3 Garlic Cloves, smashed 🧄
1 tbsp Onion, chopped 🧅
1 tsp Red Chilli Powder 🌶️
Method:
1. Wash & soak dals for 1 hour. ⏳
2. Soak tamarind in 1 cup water and extract pulp. 🍋💧
3. Dry roast coriander, cumin, fennel seeds, and peppercorns. Grind to a coarse powder. 🔥🌀
4. In a pressure cooker, add 1L water, soaked dals, salt, turmeric, ginger garlic paste, green chilli paste, and 1 tbsp oil. Cook on high flame till 1 whistle, then low flame for 7–8 mins. 🍲
5. Add kasoori methi, chopped herbs, ground spices, and garam masala. Whisk to mash the dal. 🥣
6. In a pan, heat 3 tbsp oil. Add whole spices and sauté. 🌿🔥
7. Add onions and cook till golden brown. 🧅
8. Add ginger garlic paste and sauté. 🧄
9. Add chicken and salt. Cook on high flame for 3–4 mins. 🍗
10. Add tomatoes, chilli paste, turmeric, red chilli, and coriander powder. Cook till oil separates. 🍅🌶️
11. Add bottle gourd and water. Cover and cook 7–8 mins. 🥒🔥
12. Add cooked dal. Mix and bring to a boil. 🍛
13. Add tamarind pulp and green chillies. Cook covered for 7–8 mins. 🍋🌶️
14. For tadka, heat ghee, add garlic and onion. Fry till golden. Turn off heat, add red chilli powder and mix. 🧄🧅🔥
15. Pour tadka over dal and mix. 🧈✨
16. Serve hot with rice, bread, or rotis & enjoy! 🍚🍞
