 Cheesy Veggie Muffins






Ingredients:

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 cup grated carrot

1/2 cup chopped spinach

1/2 cup shredded cheddar cheese

1 egg

1/2 cup milk

2 tbsp olive oil

Instructions:

Preheat oven to 375°F (190°C). Line or grease a muffin tin.

Mix dry ingredients in one bowl, and wet ingredients in another.

Combine both, add veggies and cheese.

Spoon into muffin tins and bake for 20–25 minutes.
